Winemaker David Trafford fra Stellenbosch i Sydafrika besøger Danmark, og i den forbindelse afholder vi Winemakers Dinner i Cirkel Ordenen Selskabslokaler på Frederiksberg. Hertil vil restauratør Peter Hansen fremtrylle en fire-retters menu.

Med en skarp forståelse for naturen og en sans for tid og sted har David Traffort lagt vægt på seriøse rødvine med stor koncentration og struktur. Men hans Chenin Blanc hvidvin og dessertvin (straw wine) er også fremragende.

Steffenbosch er det gamle center for vinproduktion i Sydafrika. Så det er med den baggrund, vi skal høre om den fremragende vin, der laves i Sydafrika nu om dage.

"De Trafford Winery ligger på den smukke Mont Fleur farm, som er placeret på toppen af en dramatisk dal over Stellenbosch, 380 meter oppe mellem Stellenbosch- og Helderberg-bjergene, lige for enden af Blaauwklip-vejen mellem Stellenbosch og Somerset West.

Historien om vinproduktion på denne bjergfarm startede med, at Trafford-familien købte ejendommen i 1976 som utilgængeligt græsningsområde. Mange af de højtliggende skråninger blev vurderet som velegnede til dyrkning af røde druesorter af høj kvalitet. Desværre måtte plantning af en kommerciel vingård vente i 18 år på grund af absurde kvotebegrænsninger. I 1983 blev en lille vinmark etableret til produktion af eksperimentelle vine – som blev drukket af familie og venner! Det var vores læringsår (1984–1991), hvor vi fik masser af hjælp og rådgivning fra lokale vinproducenter og arbejdede i Frankrig, især i Bordeaux-området.

I 1991 blev kvotebegrænsningerne ophævet. Vingården blev registreret i tide til høsten i 1992, og nye vinmarker blev plantet i 1994 og 1995. Druetyper, kloner, rodstammer, vinetæthed og espalieringssystemer blev nøje udvalgt for at passe til de subtile variationer i jord og mikroklima. Målet er at producere rødvine af høj kvalitet, som fuldt ud afspejler personligheden og det unikke ved dette bjergsted.

Udover druer dyrket på Mont Fleur, er Cabernet Sauvignon, Merlot og Chenin Blanc druer hentet fra tre vinmarker i Helderberg- og Stellenbosch-bjergområdet for at sikre druer med høj koncentration og balanceret smag fra naturligt lavtydende vinstokke. Rækker af vinstokke udvælges omhyggeligt fra de forskellige vinmarker og overvåges gennem hele vækstsæsonen for at sikre frugt af bedste kvalitet. Vores lille produktion på 3500 kasser gør, at vi kan have fuld fokus på alle detaljer.

David Trafford, ejer og vinmager, blev uddannet arkitekt fra University of Cape Town i 1988 og arbejdede som fuldtidsarkitekt indtil 1994. David byttede arkitekturen ud med vin og ægteskab ved at forlade sit job og gifte sig med Rita, der er uddannet kok og spirende kunstner. De bor midt i vinmarken og tæt på vingården, hvor de holder øje med alle aspekter af forretningen.

Winemaker David Trafford from Stellenbosch, South Africa, is visiting Denmark, and in connection with this, we are hosting a Winemakers Dinner at the Cirkel Ordenen banquet halls in Frederiksberg. Restaurateur Peter Hansen will prepare a four-course menu for the occasion.

With a keen understanding of nature and a sense of time and place, David Trafford has focused on serious red wines with great concentration and structure. But his Chenin Blanc white wine and dessert wine (straw wine) are also outstanding.

Steenbras is the old center of wine production in South Africa. It is with this background that we should learn about the excellent wines now being made in South Africa.

Introduction to David Trafford in English

"De Trafford Winery is situated on the beautiful Mont Fleur farm set at the top of a dramatic valley above Stellenbosch, 380m up between the Stellenbosch and Helderberg mountains, right at the end of the Blaauwklip road, between Stellenbosch and Somerset West.

The history of wine growing on this mountain farm started with the purchase of the property in 1976 by the Trafford family as inaccessible grazing land. Many of the high altitude slopes were deemed suitable for high quality red grape varieties. Unfortunately, due to the absurd quota restrictions, planting a commercial vineyard had to wait 18 years. In 1983 a small vineyard was established to produce experimental wines – consumed by family and friends! These were our learning curve years ( 1984 – 1991 ), which included lots of help and advice from local winemakers and working experience in France, particularly in the Bordeaux area. 

In 1991 quota restrictions were lifted. Our winery was registered in time for the 1992 harvest and a new vineyard was planted in 1994 and 1995. Varieties, clones, rootstocks, vine densities and trellis systems were carefully chosen to suit the subtle variations in soil and microclimate. The aim is to produce high quality red wines which convey the personality and uniqueness of this mountain site to the full.

​In addition to grapes grown on Mont Fleur, Cabernet Sauvignon, Merlot and Chenin Blanc grapes have been sourced from 3 vineyards in the Helderberg and Stellenbosch Mountain area to produce grapes with highly concentrated, balanced flavour from naturally low yielding vines. Rows of vines are carefully chosen from the various vineyard blocks and monitored throughout the growing season to ensure the best possible quality fruit. Our tiny production of 3500 cases means we can pay every attention to detail.

David Trafford, owner & winemaker, qualified as an Architect from the University of Cape Town in 1988 and worked as a full time Architect until 1994. David traded architecture for Wine & Wife by leaving work and marrying Rita, qualified chef & aspiring artist. Living in the middle of the vineyard and close to the winery, they watch over all aspects if the business.
