Kom med til en inspirerende og hands-on aften i chokoladens verden med Annette Drastrup – uddannet chocolatier, passioneret surdejsnørd og erfaren underviser.
På dette kursus lærer du at temperere chokolade. Jeg vil fortælle om de forskellige måder man kan temperere sin chokolade på og demonstrere den mest brugte i det private køkken.
Og så skal du selv til at temperere en omgang chokolade. Af den chokolade skal du lave dine egne stykker dyppe konfekt og en omgang fyldte chokolader.
Jeg vil demonstrere hvordan du får smukke ensartede chokolader uanset om det er dyppe konfekt eller fyldte chokolader.
Jeg vil kort fortælle om fyld i den lette, men velsmagende kategori.
Det fyld vi vil bruge på dette kursus er lavet på forhånd, da tiden skal gå på at blive helt dus med chokoladen.
Kurset vil også rumme en guide i at fejlfinde fx. hvorfor vil mine chokolader ikke slippe formen, hvorfor bliver de grå mv.
Er der tid til overs vil jeg vise et par lette dekorationsteknikker med wauw-effekt.

Join us for an inspiring and hands-on evening in the world of chocolate with Annette Drastrup – a trained chocolatier, passionate sourdough enthusiast, and experienced instructor.
In this course, you will learn how to temper chocolate. I will explain the different methods of tempering and demonstrate the most commonly used one in home kitchens.
Then it’s your turn to temper a batch of chocolate yourself. Using that chocolate, you’ll make your own dipped confections and a batch of filled chocolates.
I’ll demonstrate how to achieve beautiful, uniform chocolates—whether dipped or filled.
I’ll also briefly talk about fillings in the light but flavorful category.
The fillings we’ll use in this course are prepared in advance, so we can spend the time getting truly comfortable working with chocolate.
The course will also include a guide to troubleshooting, such as: why won’t my chocolates release from the mold, why are they turning gray, etc.
If time allows, I’ll show a few easy decoration techniques with a wow-effect.
